Chicken and Rice Soup

There’s nothing better than a warm bowl of chicken soup that can bring comfort when you are not feeling well. It’s pretty darned comfortable when you are feeling well too! I hope you enjoy this simple recipe. It’s so easy to make, it’s easy to digest, and it tastes really good.

Ingredients
  

  • 2 cups white rice – cooked
  • 1 tbsp olive oil
  • 4 cups chicken stock
  • 2 chicken thighs – cut into bite sized pieces
  • ¼ cup carrots – diced
  • ¼ cup celery – diced
  • ¼ cup onion – diced
  • 2 clove garlic – minced
  • 1 tsp fresh parsley – minced
  • 1 pinch kosher salt
  • 1 pinch black pepper

Instructions
 

  • Cook the white rice. This will take about 15 minutes. While the rice is cooking, chop your vegetables and chicken, and start your soup.

  • In a medium saucepan, heat olive oil over medium low heat until shimmering.
  • Sauté the onions, carrots, garlic, and celery until soft.
  • Add the chicken thighs and brown for a few minutes.
  • Add the chicken stock, bring to a boil, and lower heat to a simmer.
  • Cook and simmer for 13 minutes, or until chicken is cooked through.
  • Add salt, pepper, and parsley. Simmer uncovered for 2 minutes more, then ladle into a serving bowl over cooked white rice.
