There’s nothing better than a warm bowl of chicken soup that can bring comfort when you are not feeling well. It’s pretty darned comfortable when you are feeling well too! I hope you enjoy this simple recipe. It’s so easy to make, it’s easy to digest, and it tastes really good.
Chicken and Rice Soup
Equipment
- medium saucepan
- cutting board
- kitchen knife
- ladle – for serving
Ingredients
- 2 cups white rice – cooked
- 1 tbsp olive oil
- 4 cups chicken stock
- 2 chicken thighs – cut into bite sized pieces
- ¼ cup carrots – diced
- ¼ cup celery – diced
- ¼ cup onion – diced
- 2 clove garlic – minced
- 1 tsp fresh parsley – minced
- 1 pinch kosher salt
- 1 pinch black pepper
Instructions
- Cook the white rice. This will take about 15 minutes. While the rice is cooking, chop your vegetables and chicken, and start your soup.
- In a medium saucepan, heat olive oil over medium low heat until shimmering.
- Sauté the onions, carrots, garlic, and celery until soft.
- Add the chicken thighs and brown for a few minutes.
- Add the chicken stock, bring to a boil, and lower heat to a simmer.
- Cook and simmer for 13 minutes, or until chicken is cooked through.
- Add salt, pepper, and parsley. Simmer uncovered for 2 minutes more, then ladle into a serving bowl over cooked white rice.

Chicken Noodle Soup is a bit thicker and less chunky than Chicken and Rice Soup. Both soups are easy to digest, easy to make, and very comforting.
Chicken Gumbo is another tasty soup made with chicken and rice. It’s much thicker and heartier, with a roux base. It’s a little more work to prepare, but very delicious.
