Lemon Aioli
A mayonnaise-based sauce infused with flavors of lemon and garlic.
Equipment
- 1 molcajete
- 1 kitchen knife
- 1 wire whisk
Ingredients
- 1 clove garlic
- ½ tsp kosher salt
- ½ lemon – juiced
- 1 tsp Dijon mustard
- 2 large egg yolks
- ½ cup olive oil
- ¼ tsp white pepper finely ground
Instructions
- Add roughly chopped garlic glove and salt into a mortar.
- Use the back of a spoon or a pestle to crush the garlic and salt together into a paste.
- Transfer to a small bowl.
- Add lemon, egg yolks, and Dijon.
- Give it a whisk.
- Slowly drizzle in the olive oil, whisking the entire time until emulsified and creamy.
- Season to taste with salt and white pepper
