Equipment

  • 1 molcajete
  • 1 kitchen knife
  • 1 wire whisk

Ingredients
  

  • 1 clove garlic
  • ½ tsp kosher salt
  • ½ lemon – juiced
  • 1 tsp Dijon mustard
  • 2 large egg yolks
  • ½ cup olive oil
  • ¼ tsp white pepper finely ground

Instructions
 

  • Add roughly chopped garlic glove and salt into a mortar.
  • Use the back of a spoon or a pestle to crush the garlic and salt together into a paste.
  • Transfer to a small bowl.
  • Add lemon, egg yolks, and Dijon.
  • Give it a whisk.
  • Slowly drizzle in the olive oil, whisking the entire time until emulsified and creamy.
  • Season to taste with salt and white pepper
