- ⅓ cup vegetable oil
- ⅓ cup all-purpose flour
- 3 large yellow onions - chopped
- 2 cups chicken stock
- 4 chicken thighs
- 1 tsp salt - more to taste
- ½ tsp black pepper - more to taste
- 1 bunch green onions - chopped
Make a dark roux over medium heat with the oil and flour.
1/3 cup vegetable oil, 1/3 cup all-purpose flour
Add chopped onions and cook until tender.

Add enough stock to the roux to make a thick gravy. Add chicken and seasonings. Simmer until chicken is tender.
2 cups chicken stock, 4 chicken thighs, 1 tsp salt, 1/2 tsp black pepper
Add green onions.

Serve over cooked rice.
