Ingredients
  

  • cup vegetable oil
  • cup all-purpose flour
  • 3 large yellow onions - chopped
  • 2 cups chicken stock
  • 4 chicken thighs
  • 1 tsp salt - more to taste
  • ½ tsp black pepper - more to taste
  • 1 bunch green onions - chopped

Instructions
 

  • Make a dark roux over medium heat with the oil and flour.
    1/3 cup vegetable oil, 1/3 cup all-purpose flour
    Dark Roux - dark colored roux in a Dutch oven.
  • Add chopped onions and cook until tender.

  • Add enough stock to the roux to make a thick gravy. Add chicken and seasonings. Simmer until chicken is tender.
    2 cups chicken stock, 4 chicken thighs, 1 tsp salt, 1/2 tsp black pepper
