Country Gravy

Creamy white gravy with black pepper, perfect for mashed potatoes, pork chops or country fried steak.

Equipment

  • microwave
  • medium cast-iron skillet
  • wire whisk

Ingredients
  

  • 2 tbsp butter
  • 2 tbsp all purpose flour
  • 2 cups whole milk
  • 1 tsp kosher salt
  • 1 tsp black pepper - course ground

Instructions
 

  • Microwave milk for 3 minutes on high.
  • In a medium cast-iron skillet, melt butter over medium heat.
    2 tbsp butter
  • Whisk in flour. Continue whisking until flour is slightly toasted.
    2 tbsp all purpose flour
  • Whisk in hot milk a little at a time until fully incorporated with no lumps.
    2 cups whole milk
  • Whisk in salt and pepper
    1 tsp kosher salt, 1 tsp black pepper
  • Continue to whisk liquid until it thickens to desired consistency.

Notes

Substitute 1 tbsp rendered bacon fat for 1 tsps butter to make a pork cream gravy.
