Instructions
Microwave milk for 3 minutes on high.
In a medium cast-iron skillet, melt butter over medium heat.

Whisk in flour. Continue whisking until flour is slightly toasted.
2 tbsp all purpose flour
Whisk in hot milk a little at a time until fully incorporated with no lumps.
2 cups whole milk
Whisk in salt and pepper
1 tsp kosher salt,
1 tsp black pepper
Continue to whisk liquid until it thickens to desired consistency.
Notes
Substitute 1 tbsp rendered bacon fat for 1 tsps butter to make a pork cream gravy.
