Ingredients
  

  • 8 medium red potatoes - halved
  • 2 tbsp olive oil - extra virgin
  • 2 clove garlic - minced
  • 2 tbsp parmesan cheese - grated
  • 1 tbsp fresh parsley - minced
  • 1 tsp kosher salt - more to taste
  • ½ tsp black pepper - more to taste

Instructions
 

  • In a small glass bowl, toss halved potatoes in 1 tbsp olive oil. Microwave on high for 2 ½ minutes. This will cook the potatoes, but they will not be browned.
  • Heat the remaining 1 tbsp olive oil over medium heat in a medium skillet. Cook potatoes, cut side down until browned.

  • Turn potatoes over, and add a small pinch of minced garlic to the cut side of each potato half. Turn potatoes over again on top of the garlic for 1 minute longer.

  • Turn the potatoes over once again, add salt and pepper, and a pinch of parmesan cheese.

  • Garnish with minced parsley, and serve warm.
