Ingredients
8medium red potatoes- halved
2tbspolive oil- extra virgin
2clovegarlic- minced
2tbspparmesan cheese- grated
1tbspfresh parsley- minced
1tspkosher salt- more to taste
½tspblack pepper- more to taste
Instructions
In a small glass bowl, toss halved potatoes in 1 tbsp olive oil. Microwave on high for 2 ½ minutes. This will cook the potatoes, but they will not be browned.
Heat the remaining 1 tbsp olive oil over medium heat in a medium skillet. Cook potatoes, cut side down until browned.
Turn potatoes over, and add a small pinch of minced garlic to the cut side of each potato half. Turn potatoes over again on top of the garlic for 1 minute longer.
Turn the potatoes over once again, add salt and pepper, and a pinch of parmesan cheese.
