Ingredients
1medium red onion- thinly sliced into half circles.
4roma tomatoes- cut into bite-sized wedges.
1English cucumber- stripped and cut into bite-sized wedges.
1bell pepper- cored and sliced into rings.
1cupKalamata black olives- pitted
1 ½tspdried oregano
1tspkosher salt
½tspblack pepper- freshly cracked
¼cupextra virgin olive oil
2tbspred wine vinegar
7ozfeta cheese- block cheese, cut into thin rectangles.
Instructions
Defang the Onion (optional, but recommended)
Fill a small bowl with cold water, add a Tbsp of red wine vinegar to the water, then add the onion slices. Set aside for 10 - 30 minutes. This will mellow the onions sharp raw taste.

Combine the Vegetables
Add the tomatoes, cucumber, bell pepper, and olives into a salad bowl. Drain the onions and add them as well.

Add the Seasonings
Sprinkle most of the oregano, plus the salt and pepper. Add the oil and vinegar, then give it a good toss.
1 1/2 tsp dried oregano, 1 tsp kosher salt, 1/2 tsp black pepper, 1/4 cup extra virgin olive oil, 2 tbsp red wine vinegar
Top with the feta and the remaining oregano. Plate and serve.
