Ingredients
  

  • ¼ cup vegetable oil
  • ¼ cup butter
  • 2 pounds russet potatoes - peeled and sliced thin
  • ½ cup yellow onion - sliced
  • ½ tsp kosher salt
  • ½ tsp black pepper

Instructions
 

  • Add vegetable oil and butter to a 10 or 12-inch skillet, over medium heat.

  • As soon the butter melts add the potatoes. Top with sliced onions, salt and pepper.
