Pre-heat oven to 400 degrees. Heat a heavy skillet over high heat for 5 minutes, or until white hot.
Set out chops while you heat the oven and the skillet, so they approach room temperature. Rub olive oil all over chops, then heavily salt and lightly pepper on all sides. Pork needs lots of salt to bring out the best flavor.
Sear both sides of each chop in the hot skillet for 2 minutes.
Insert a digital thermometer into a pork chop. Place the skillet into the hot oven, and roast the chops until internal temperature reaches 145 degrees, about 10 - 15 minutes.
Remove from oven and skillet, tent with foil, and rest for 5 - 10 minutes before serving.
