Ingredients
 
 

  • 1 tbsp olive oil
  • ¼ cup onion – finely chopped
  • 3 cloves garlic – minced
  • ¼ cup carrot – peeled and finely chopped
  • ¼ cup celery – finely chopped
  • ¼ cup peas
  • ¼ cup corn kernels
  • ½ pound ground beef – 80/20
  • 1 cup stewed crushed tomatoes
  • 1 tsp fresh oregano – minced
  • 1 tsp fresh thyme – minced
  • 1 tsp fresh basil – minced
  • 2 bay leaves
  • 6 cups beef stock
  • 1 cup Ditalini noodles
  • 1 tsp kosher salt
  • ½ tsp black pepper

Instructions
 

  • Add olive oil to a Dutch oven and bring up to medium heat.

  • Stir to incorporate, then bring up to a fast boil.

  • Reduce heat to a low boil. Cook pasta for 10 minutes until al-dente, or according to package instructions.

Variations

Zuppa Fagioli

Add cannellini beans and spinach leaves. Use less stock (4 cups) to make Zuppa Fagioli. The stock can be beef or vegetable. Great Northern beans, or any white bean would work fine. Give the beans a good rinse before adding them to the soup.

Zuppa Minestroni

Add diced potato instead of pasta, and zucchini, squash, green beans to make Zuppa Minestrone.

Vegetable Options

You can pretty much use what you have on hand. Corn, peas, zucchini, squash, kale are all great options. Get creative!

Tomatoes

I’m using chunky Roasted Cherry Tomato Sauce from my garden in this recipe. A good grocery store option would be San Marzano peeled tomatoes – just crush them by hand before adding to the soup.

Pasta Options

I like to use the Ditalini pasta, but other pastas are equally good. Try Tubbetini, or Farfalline. Any small, hollow noodle will do. Hollow noodles allow the sauce to get inside. Small noodles allow enough room on your spoon to include broth, vegetables and meat in your bite.

Serve with Bread
