Garlic Parmesan New Potatoes
Equipment
- glass bowl
- medium skillet
- cutting board
- kitchen knife
- spatula
Ingredients
- 8 medium red potatoes – halved
- 2 tbsp olive oil – extra virgin
- 2 clove garlic – minced
- 2 tbsp parmesan cheese – grated
- 1 tbsp fresh parsley – minced
- 1 tsp kosher salt – more to taste
- ½ tsp black pepper – more to taste
Instructions
- In a small glass bowl, toss halved potatoes in 1 tbsp olive oil. Microwave on high for 2 ½ minutes. This will cook the potatoes, but they will not be browned.
- Heat the remaining 1 tbsp olive oil over medium heat in a medium skillet. Cook potatoes, cut side down until browned.
- Turn potatoes over, and add a small pinch of minced garlic to the cut side of each potato half. Turn potatoes over again on top of the garlic for 1 minute longer.
- Turn the potatoes over once again, add salt and pepper, and a pinch of parmesan cheese.
- Garnish with minced parsley, and serve warm.

Microwave first
Microwave the new potatoes first. This will cook them through, allowing you to lightly fry in olive oil just until browned. The potatoes will be soft on the inside, and crispy golden-brown on the outside.
You could boil the potatoes instead of microwaving, but it would have the same effect of cooking the potatoes through. Microwaving is faster, and the end result is the same.
Great Presentation
I love Garlic Parmesan New Potatoes! They add great color, aroma and presentation to anything you served them with. Garnish with flaky parmesan, course salt, and a pinch of fresh parsley. Beautiful!
Delicious with sauces
For a special treat, serve with Prime Rib and Mushroom Gravy, or a Filet Mignon with Balsamic Red Wine Reduction Sauce. Oh so good!
Variations
Instead of parsley, use fresh rosemary. Rosemary has a powerful aroma, so just add two or three small leaves to each potato half. This has a great visual appeal, and delicious flavor that will pair well with chicken or beef.
