Garlic Rosemary Roasted Potatoes, topped with Parmesan cheese. It’s a perfect side-item for grilled or roasted foods. Garlic Rosemary Roasted Potatoes

Ingredients
  

  • 6 Yukon Gold potatoes – small size
  • 1 tsp kosher salt
  • ½ tsp baking soda
  • 1 tbsp olive oil
  • 1 tsp fresh rosemary – finely chopped
  • 3 cloves garlic – minced
  • 2 tbsp parmesan cheese – shredded
  • 1 tbsp Italian parsley – finely chopped

Instructions
 

Parboil the Potatoes

  • Add whole baby Yukon Gold potatoes to a sauce pan, and cover with an inch of cold water. Add Salt and Baking Soda. Bring up to a boil, reduce heat to simmer and cook for 5-6 minutes until potatoes can be easily pierced with a fork.
    6 Yukon Gold potatoes, 1/2 tsp baking soda, 1 tsp kosher salt
    Blanch Baby Yukon Gold potatoes

Season the Potatoes

  • Add olive oil, rosemary, garlic, salt, and pepper to a glass bowl.
    1 tbsp olive oil, 1 tsp fresh rosemary, 3 cloves garlic

  • Halve the parboiled potatoes and toss in the olive oil mixture.

Roast the Potatoes

  • Preheat the oven to 500℉. Add the seasoned potatoes onto the foil, cut side up. Top each half with a pinch of salt and some shredded parmesan cheese.
    2 tbsp parmesan cheese
    Add potato halves to foil lined baking sheet and top each with a pinch of parmesan.
  • Roast for 10 minutes, or until cheese is melted and golden brown.
    Roast at 500 degrees for 10 minutes
  • Remove the roasted potatoes from the oven, and garnish with a pinch of chopped parsley.
    1 tbsp Italian parsley
    Remove roasted potatoes from the oven.
  • Serve as a side item with steak, pork, or chicken.

Anything that would pair well with Garlic Rosemary Roasted Potatoes, would probably also pair well with French Bread.

Potatoes

Baby Yukon Gold, or Red potatoes work best for this recipe. Choose a potato size that when cut in half would make a single bite. Parboiling the potatoes before roasting will ensure they are cooked through, and will shorten the roasting time. Adding baking soda to the water. This will result in a crispy, crusty outside but a fluffy and steamy inside when roasting potatoes.

Fresh Rosemary and Garlic

Use finely chopped fresh rosemary and garlic for the best flavor. Dried rosemary or granulated garlic will not release as much flavor, and are much more suitable for soups or stews where they would be reconstituted in the liquid.

Sauces

Garlic Rosemary Roasted Potatoes taste great with steak sauces, such as a Balsamic Red Wine Reduction Sauce, or Diane Sauce. They are delicious with brown Mushroom Gravy, or with a savory onion gravy such as with Smothered Pork Chops. You don’t need to make a sauce specifically for these potatoes – they taste really good on their own. But, rest assured that they will pair nicely with any of the above mentioned sauces or gravies.
