If you are like me, you cringe at the idea of wasting good food, especially when you made the effort to prepare it from scratch. If you made Chicken Parmigiana and Marinara, this delicious sandwich will make a terrific lunch from your leftovers, assuming you have any. ‘Panino della Marina’ translates to ‘Godmother’s Sandwich’. This is a less spicy analog to another great sandwich creation, The Godfather Spicy Meatball Sub. Buon Appetito!
Panino della Madrina
Chicken Parmigiana Sandwich with Marinara Sauce
Equipment
- panini machine
- ramekin – for the melted butter
- silicon brush – for applying the butter
- cutting board
- kitchen knife
Ingredients
- Bolillo bread – split
- 1 tbsp butter – softened
- ½ cup Mozzarella cheese – shredded
- 1 piece Chicken Parmigiana
- 1 ½ cup Marinara Sauce – warmed
Instructions
- Heat panini machine to 400 degrees on top and bottom grill plates.
- Split the bolillo bread and brush all sides with softened butter.
- Add a dollop of marinara sauce to one side of the sandwich. Top with a piece of chicken parmigiana, more sauce, and some shredded mozzarella. Add the other side of the sandwich, then press until the cheese is melted, and grill marks appear on both sides.
- Cut sandwich into halves, then serve warm with a ramekin of warm marinara sauce for dipping.
Notes
This is a delicious way to enjoy left-over Chicken Parmigiana and Marinara Sauce.
