Benjamin Buford Blue (Bubba): Anyway, like I was sayin’, shrimp is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, saute it. Dey’s uh, shrimp-kabobs, shrimp creole, shrimp gumbo. Pan fried, deep fried, stir-fried. There’s pineapple shrimp, lemon shrimp, coconut shrimp, pepper shrimp, shrimp soup, shrimp stew, shrimp salad, shrimp and potatoes, shrimp burger, shrimp sandwich. That- that’s about it.

Yep. That’s about it. This Shrimp Salad Sandwich puts a dot at the end of that sentence, to be sure. You could say it’s shrimply delicious! That’s all I have to say about that.

Ingredients
 
 

  • 1 tsp kosher salt
  • 1 quart water
  • 12 ounce raw shrimp – peeled and deveined
  • 1 ½ tsp Old Bay seasoning – divided
  • 2 tsp lemon juice – freshly squeezed, more to taste
  • cup mayonnaise
  • 1 dash Worcestershire sauce
  • 1 pinch cayenne pepper
  • ¾ cup iceberg lettuce – shredded
  • ¼ cup celery – finely chopped
  • cup scallions – coarsely chopped
  • 2 hoagie rolls – split and toasted

Instructions
 

  • Add the kosher salt to a quart or so of water in a medium pot.
    1 tsp kosher salt, 1 quart water
  • Bring just to a simmer and add the shrimp. Stir and cook for 1 to 2 minutes (depending upon the size of the shrimp); they should be pink and barely translucent.
    12 ounce raw shrimp
  • Drain, rinse briefly under cool water, and pat dry. Dice the cooked shrimp into ¼ inch pieces.
  • Place the shrimp in a small bowl and add ½ tsp of the Old Bay and 1 tsp of the lemon juice. Toss to coat and place in the refrigerator for about 20 minutes to cool completely.

  • Whisk the remaining Old Bay seasoning, remaining lemon juice, mayonnaise, cayenne pepper and Worcestershire sauce together in a medium size bowl to make the dressing.
    1/3 cup mayonnaise, 1 dash Worcestershire sauce, 1 pinch cayenne pepper
  • Toss half of the dressing with the shredded lettuce.
    3/4 cup iceberg lettuce
  • Add cooled shrimp, celery and scallions to the other half of the dressing, tossing gently to coat. Adjust seasoning; add more salt or lemon juice if needed.
    1/4 cup celery, 1/3 cup scallions
  • Serve on toasted rolls or buns topped with shredded lettuce tossed in dressing and the shrimp.
    2 hoagie rolls

Notes

The shrimp salad tastes great all by itself, if you don’t care to make a sandwich.

Selecting Shrimp

The best sized shrimp to use on sandwiches is medium 41/40 count per pound. They are easier to clean than small shrimp. Medium sized shrimp will give you several chunks of shrimp in each bite. There is little sense in using expensive jumbo or colossal sized shrimp in shrimp salad, because you are cutting the shrimp up anyways.

Make sure you are using good quality fresh shrimp, or Individually Quick Frozen shrimp for the best results.
