Introduction
Totopos Caseros, or homemade corn tortillas chips are easy to make, and they taste way better than anything you will find in your supermarket. They are sturdy enough for Nachos Compuestos, Guacamole or Salsa. They and can also be used with Huevos Rancheros, or Migas if they are fried in strips.

Equipment
- large cast-iron skillet
- large cookie sheet – to drain the fried chips
- paper towels – to drain the fried chips
- basket – for serving
Ingredients
- 10 corn tortillas – color of your choice
- 4 cups vegetable oil – about 1/4 inch of oil in the pan
- 1 tbsp Tex-Mex spice blend
Instructions
- Add ¼ inch vegetable oil to a large skillet, bring to 350℉.
- Cut a stack of 10 corn tortillas into quarters.
- Fry tortilla quarters in small batches, so as not to crowd. I do about 10 at a time. Fry for about 1 minute, then turn them over and fry another minute, or until tortillas start to brown.
- Remove tortillas to a cookie sheet lined with paper towels to drain excess oil. Repeat until all the chips are fried, then sprinkle the Tex-Mex spice blend onto the chips while they are still warm.

It seems silly spending $5 or more on a store-bought bag of tortilla chips. They are so easy to make at home. A an inexpensive package of 30 corn tortillas will make 120 chips! That’s more twice the number of chips than you would get in an 11-ounce bag. Most store-bought tortilla chips are very thin, and can hardly stand up to a thick salsa, much less a chunky guacamole or a dense queso.

Homemade corn tortilla chips are sturdy, and they pair perfectly with Nachos Compuestos, or dips such as Guacamole or Queso Poblano. My homemade Tex-Mex Spice Blend adds the perfect seasoning, too. They look beautiful, and taste great.

Nachos are next-level excellent with totopos caseros. Add some shredded cheddar and sliced jalapeños then toast for a few minutes under a broiler to melt the cheese. Que Magnifico!
