Guacamole

Who doesn’t love guacamole? My guacamole recipe is chock full of tomato, onion, jalapeño, cilantro, lime, salt, and a hint of cumin. It’s not over-smashed and it’s muy delicioso! Serve it up with Totopos Caseros and a chilled Agave Margarita for a perfect afternoon patio snack.

Ingredients
  

  • 2 limes – juiced
  • 1 jalapeño – hot (skin blistered), finely chopped
  • ½ cup onion – white, chopped
  • 1 tsp Tex-Mex spice blend
  • 1 tsp Kosher salt – coarsely ground
  • 2 tomatoes – Roma, diced
  • ½ cup cilantro – torn

Instructions
 

  • Add lime juice, jalapeño, onion, salt, and Tex-Mex spice blend to your molcajete. Crush these together a bit, but not too much.
  • Add tomatoes, and gently crush some more.
  • Fold in diced avocado and torn cilantro.
  • Adjust salt and lime as needed.

What makes it perfect?

The ingredients in this recipe are simple. But, what makes Perfect Guacamole is all in the technique. Never smash the avocados! Dice them instead. Then, gently toss them with a large spoon until you achieve the right consistency. Perfect guacamole should be easily scoop-able with a tortilla chip without breaking it.

Don’t over-process the avocados!

You should still be able to make out all of the ingredients just by looking at it. If it looks like baby food, you have gone way too far! To keep it from bruising, squeeze some lime juice on top. Serve immediately with homemade tortilla chips for the best possible guacamole experience.

Use Roma tomatoes

Use Roma tomatoes. They are easy to deseed, and have a firm flesh and good flavor. Using a paring knife, cut the Romas into quarters lengthwise. Use the tip of the knife to lift away the seeds, and scrape off any excess tomato juice. If you add too much of the juice, it will thin out the guacamole, and detract from the consistency and visual appeal. After removing the seeds and juice, cut the tomato quarters into strips, then turn them 90 degrees to dice.

Fresh ingredients

Always use fresh ingredients. The avocados should be ripe, but not too ripe as to be mushy. Fresh lime, jalapeño and cilantro are a must for the best guacamole. Don’t chop the cilantro, tear it. Chopping the cilantro will cause it to wilt more quickly. Tearing it ensures you get the best cilantro flavor.
