- 2 limes - juiced
- 1 jalapeño - hot (skin blistered), finely chopped
- ½ cup onion - white, chopped
- 1 tsp Tex-Mex spice blend
- 1 tsp Kosher salt - coarsely ground
- 2 tomatoes - Roma, diced
- ½ cup cilantro - torn
Add lime juice, jalapeño, onion, salt, and Tex-Mex spice blend to your molcajete. Crush these together a bit, but not too much.
Add tomatoes, and gently crush some more.
Fold in diced avocado and torn cilantro.
Adjust salt and lime as needed.
