Black Eyed Peas for Luck!

A New Year's day traditional recipe that I hope brings you good luck!

Ingredients
  

  • 4 slice thick cut bacon - cut into 1-inch pieces
  • 1 onion - finely chopped
  • ¼ cup celery - finely chopped
  • ¼ cup green bell pepper - finely chopped
  • ¼ cup red bell pepper - finely chopped
  • 1 clove garlic - minced
  • 4 cups chicken stock
  • 1 tsp dried thyme
  • 2 bay leaves
  • 32 ounce canned black eyed peas - 2 16-oz cans
  • ¼ cup flat leaf parsley - chopped

Instructions
 

  • Gather and prepare ingredients.

  • In a large dutch oven, or stock pot, add bacon and cook until well browned.

  • Add onions, celery, and bell peppers then sauté until soft. Add garlic, and sauté for 1 minute more.

  • Add chicken stock, thyme and bay leaves, and bring to a boil.
    4 cups chicken stock, 1 tsp dried thyme, 2 bay leaves

  • Add black eyed peas, and reduce to a simmer. Simmer for thirty minutes.
    32 ounce canned black eyed peas, 1/4 cup flat leaf parsley

  • Add chopped parsley and serve. Optionally add a hunk of cornbread.

Notes
