Breakfast Fried Rice
Fried rice with bacon and egg.

- 2 cups white rice - day old is better
- 3 eggs - beaten
- 1 cup onion - chopped (medium onion)
- ¼ bunch green onion - chopped
- 3 slice bacon - thick cut is better
- ½ tsp sea salt - ground
- ¼ tsp black pepper - ground
- 1 tbsp soy sauce
Fry diced bacon over medium heat until most of that fat has rendered.
Add chopped onions and sauté until soft.
Remove onion and bacon, and set aside.
Add cooked white rice. Stir fry until hot.
Stir cooked onion and bacon mixture back into the rice.
Push the rice, bacon and onion to the outside of the pan. Pour beaten eggs into the middle of the pan.
Gently and continuously push the eggs toward the center of the pan until all of the egg has set.
Stir the egg into the rice until thoroughly mixed.
Stir in soy sauce, chopped green onion, salt and pepper.
Serve hot!
