Breakfast fried rice is a great way to use leftover cooked white rice. Stir fried rice, bacon, onion and egg – it’s super simple to prepare and a very delicious way to start your day. Here’s how to make it.

Equipment

  • wok or large cast-iron skillet
  • wire whisk
  • glass bowl
  • cutting board
  • kitchen knife
  • large cooking spoon

Ingredients
  

  • 2 cups white rice – day old is better
  • 3 eggs – beaten
  • 1 cup onion – chopped (medium onion)
  • ¼ bunch green onion – chopped
  • 3 slice bacon – thick cut is better
  • ½ tsp sea salt – ground
  • ¼ tsp black pepper – ground
  • 1 tbsp soy sauce

Instructions
 

  • Fry diced bacon over medium heat until most of that fat has rendered.

  • Add chopped onions and sauté until soft.

  • Remove onion and bacon, and set aside.
  • Add cooked white rice. Stir fry until hot.

  • Stir cooked onion and bacon mixture back into the rice.

  • Push the rice, bacon and onion to the outside of the pan. Pour beaten eggs into the middle of the pan.

  • Gently and continuously push the eggs toward the center of the pan until all of the egg has set.

  • Stir the egg into the rice until thoroughly mixed.

  • Stir in soy sauce, chopped green onion, salt and pepper.

  • Serve hot!

More Information

Use Day Old Cooked White Rice

Next time you make too much white rice, save your leftovers in the fridge. Next morning, use it to make breakfast fried rice. It’s actually better to use day-old rice, than freshly cooked rice. Day old rice is drier and has better texture. It won’t clump or stick together the way fresh rice does.

Use Thick Cut Bacon

Unflavored, thick-cut bacon is the best to use. Chop it into 1-inch pieces before cooking. It works better when stir frying than larger pieces of bacon. It crisps up nicely and is small enough to fit on your fork along with some rice and egg.

Soy Sauce

It’s best to use light or medium soy sauce. I’ve experimented with dark soy and mushroom soy, but in my opinion they overpower the other flavors in this simple dish. Plus they add too dark of a coloring which is not as visually appealing as a light or medium soy.

I like to use a small bowl to soak the chopped green onions in the soy sauce while I cook the bacon, onions, and rice. Then I’ll pour it together onto the fried rice when I’m ready for it.

Wok or Skillet

If you have a good wok, by all means use it! Woks are great for stir frying because they create heat zones. You can push the rice out to the sides when cooking the eggs in the middle, for example. If you don’t have a wok, a large well seasoned cat-iron skillet works almost just as well.
