1 wire whisk
1 cast-iron skillet
1 spatula
- 2 eggs
- 2 tbsp whole milk
- ⅛ tsp kosher salt
- ⅛ tsp black pepper
- 1 tbsp butter
Whisk eggs, milk, salt and pepper until frothy
Add the butter to a non-stick pan or properly seasoned skillet and turn heat to high.
When the butter starts to sizzle, add egg wash to center of the pan so the melted butter spreads out to the edge of the pan.
When curd begins to form in the eggs, turn the heat to low and fold the eggs until they are done.
Transfer to a pre-warmed plate, and serve immediately.
