Equipment

  • 1 wire whisk
  • 1 cast-iron skillet
  • 1 spatula

Ingredients

  • 2 eggs
  • 2 tbsp whole milk
  • tsp kosher salt
  • tsp black pepper
  • 1 tbsp butter

Instructions

  • Whisk eggs, milk, salt and pepper until frothy
  • Add the butter to a non-stick pan or properly seasoned skillet and turn heat to high.
  • When the butter starts to sizzle, add egg wash to center of the pan so the melted butter spreads out to the edge of the pan.
  • When curd begins to form in the eggs, turn the heat to low and fold the eggs until they are done.
  • Transfer to a pre-warmed plate, and serve immediately.
