- 1 wire whisk
- 1 cast-iron skillet
- 1 spatula
Ingredients
- 2 eggs
- 2 tbsp whole milk
- ⅛ tsp kosher salt
- ⅛ tsp black pepper
- 1 tbsp butter
Instructions
- Whisk eggs, milk, salt and pepper until frothy
- Add the butter to a non-stick pan or properly seasoned skillet and turn heat to high.
- When the butter starts to sizzle, add egg wash to center of the pan so the melted butter spreads out to the edge of the pan.
- When curd begins to form in the eggs, turn the heat to low and fold the eggs until they are done.
- Transfer to a pre-warmed plate, and serve immediately.

American vs French style
This recipe for making perfect scrambled eggs is more of a French method. Whisk the eggs with a bit of milk, then gently cook in butter. This will result in a smooth, creamy, fluffy texture.
To make American style scrambled eggs, cooked them quickly over high heat while vigorously stirring. This will result in distinct curds that some people like, but you won’t find them in this recipe. American scrambled eggs are good, too. But in my opinion, they do not achieve perfection.
Fresh is always best
If you can find farm-fresh, free-range eggs you are in for a treat. Grocery store eggs are good, but farm-fresh eggs are amazing! Farm-fresh eggs have less cholesterol, less saturated fat, more vitamins, and double the amount of Omega-3 fatty acids. They have better color, the yolks are more golden, and the flavor is much better.
Pro-tip
Find a long-handled small cast-iron skillet with tapered sides and a lid. Dedicate this skillet for making eggs, and don’t use it for anything else. Always use butter when cooking, and never use soap when cleaning. The eggs will not stick, and will always release easily. This skillet will be your best friend for making perfect scrambled eggs, perfect fried eggs, perfect poached eggs, or for perfect omelets.
Variations
Instead of plain butter, try using Herbed Butter for a delicious twist. Herbed butter adds flavors of thyme, oregano, and parsley which imparts a very lovely flavor to the eggs.
Scrambled eggs also taste wonderful topped with warm Ranchero Sauce, or made into Breakfast Tacos or Migas.
