  • Preheat oven to 450℉. While the oven is preheating, heat vegetable oil in a medium skillet to 350℉.

  • Fry the corn tortillas until crisp, then drain them on a paper towel and add them to a baking sheet. Lightly sprinkle with Tex-Mex Spice Blend.
    4 corn tortillas, 1 tbsp Tex-Mex Spice Blend

  • Top with 2 tbsp Carne Molida (taco meat), the spread 2 tbsp Texas Enchilada Sauce over the meat.

  • Add ¼ cup Refried Black Beans and ¼ cup grated cheddar over the sauced meat. Add a dash of hot sauce, if you wish.

  • Bake for 5 minutes, then remove to serving plates. It's ok if the cheese is slightly charred. Top with sour cream, diced tomatoes, and cilantro. Serve hot.
