Truffle Aioli
A mayonnaise based sauce infused with flavors of lemon, garlic, and truffles.

- 3 clove garlic
- ½ tsp kosher salt
- ½ lemon juiced
- 2 egg yolks
- ¾ cup olive oil
- 3 tbsp quality truffle oil
Roughly chop garlic clove onto a cutting board or into a molcajete. Add salt.
Use the back of a spoon or a tejolote to crush the garlic and salt together into a paste.
Transfer to a small bowl.
Add lemon juice and egg yolks.
Whisk everything together.
Slowly drizzle in the olive oil while whisking continuously.
Do the same with the truffle oil.
When the mixture emulsifies, you're done.
- Aioli should be smooth and somewhat thick. Whisk in more oil if necessary to further thicken to your desired consistency.
- Add about ¼ cup to a ramekin for dipping, or slather about 1 Tbsp in place of mayonnaise on a sandwich.
