Introduction

Truffle aioli is a homemade mayonnaise-like sauce infused with lemon, garlic, and truffle flavor. It’s delicious on a Mushroom Swiss Burger, or as a dip for Shoestring Truffle Fries.

Equipment

  • 1 molcajete & tejolote
  • 1 kitchen knife
  • 1 wire whisk
  • 1 small bowl
  • 4 ramekins if used for dipping

Ingredients
  

  • 3 clove garlic
  • ½ tsp kosher salt
  • ½ lemon juiced
  • 2 egg yolks
  • ¾ cup olive oil
  • 3 tbsp quality truffle oil

Instructions
 

  • Roughly chop garlic clove onto a cutting board or into a molcajete. Add salt.

  • Use the back of a spoon or a tejolote to crush the garlic and salt together into a paste.

  • Transfer to a small bowl.

  • Add lemon juice and egg yolks.

  • Whisk everything together.

  • Slowly drizzle in the olive oil while whisking continuously.

  • Do the same with the truffle oil.

  • When the mixture emulsifies, you're done.

Notes

  • Aioli should be smooth and somewhat thick. Whisk in more oil if necessary to further thicken to your desired consistency.
  • Add about ¼ cup to a ramekin for dipping, or slather about 1 Tbsp in place of mayonnaise on a sandwich.

More Information

Tips

Don’t over-whisk your aioli. This will cause it to have a consistency and color like banana pudding, which is not what you want. It should be slightly runny. When you add it to a burger, for example, it should naturally want to drip down the sides.

Black or White Truffle Oil?

Truffle Aioli can be made with black truffle oil, or white truffle oil. Black truffle oil has a stronger, more earthy flavor. White truffle oil is more delicate, with garlic undertones. Use whichever one you desire.

Is truffle oil made with real truffles?

Unfortunately, most products being marketed as truffle oil are just olive oil with a chemical added that mimics the aroma of actual truffles. Real truffle oil is quite rare and expensive. It will be labelled something like “oil infused with truffles”. No matter, truffle aioli is still very tasty whether or not the oil being used contains actual truffles.
