Equipment

  • charcoal grill – a kettle grill, green egg, or my 'Bayou Classic Cypress Grill' works great!
  • quality oak charcoal – good quality lump charcoal is the best
  • grill spatula
  • tray or plate – for serving

Ingredients

  • 4 Brioche burger buns – split
  • 1 tbsp butter
  • 1 cup Truffle Aioli
  • 1 cup Sautéed Mushrooms
  • 8 slices aged Swiss cheese
  • 8 leaf leaf lettuce
  • 1 pound ground beef – 80% lean
  • 1 pinch seasoned salt
  • 1 pinch seasoned pepper
  • 12 dash Worcestershire sauce

Instructions

  • Set the butter out to soften while you prepare the aioli and sautéed mushrooms.

  • Make four burger patties from the ground beef, and arrange on a tray. Use the back of a spoon to make a shallow indentation into each. Sprinkle seasoned salt and seasoned pepper onto the top side of the patties. Fill the indentations with a few dashes of Worcestershire sauce each. Put the tray of burger patties back into the refrigerator while you start the grill.

More Information

Mastering the Bun

The foundation of this burger is a golden, buttery brioche bun, and I don’t skimp on the toasting. I heat up a comal or cast-iron skillet over medium heat, slather the buns with a generous pat of butter, and let them toast until they’re crisp on the edges yet still soft inside. That subtle crunch paired with the rich brioche flavor is the perfect contrast to the juicy patty and creamy toppings.

The Sautéed Mushroom Magic

What’s a Mushroom Swiss Burger without its namesake? I take sliced cremini mushrooms—earthy and meaty—and sauté them in a sizzling mix of butter and olive oil until they turn a gorgeous golden brown. As they cook, they soak up that rich, nutty flavor, releasing an aroma that’s pure comfort. Once they’re perfectly caramelized, I sprinkle them with freshly chopped parsley for a pop of color and a hint of freshness. These beauties crown the patty, making every bite a savory delight.

Grilling Like a Pro

For that irresistible char-grilled taste, I fire up my grill with high-quality charcoal and bring it to a steady 420 degrees. Patience is key here—I let the grates heat up for a solid 15 minutes before the patties hit the surface. Those screaming-hot grates sear the beef, locking in flavor and giving it that gorgeous crust.

Shaping Perfect Patties

Even cooking starts with evenly sized burgers. I often use a digital scale with a square of parchment paper to weigh out each patty—usually around 6 ounces—for precision. If I’m feeling less fussy, I’ll just eyeball the ground meat and form them by hand, aiming for uniform thickness. A little trick? Press a slight dimple into the center of each patty with your thumb. It helps them cook flat and juicy instead of puffing up like a meatball.

Cooking Times for Your Perfect Doneness

Grill times depend on how you like your burger. For medium-rare, with a warm red center, cook the patties about 3 to 4 minutes per side. For medium, with a pinkish core, aim for 4 to 5 minutes per side. If medium-well is your preference, with just a hint of pink, go for 5 to 6 minutes per side. Keep an eye on them—high heat works fast!

Melting the Swiss

To get that gooey Swiss cheese blanket, I add the slices during the last minute of grilling. Closing the lid traps the heat and melts the cheese into every crevice of the patty. One minute is usually all it takes—any longer, and you risk overcooking the beef.

Resting for Juiciness

Once off the grill, I let the burgers rest for 5 minutes under a loose foil tent. This step is non-negotiable—it allows the juices to redistribute, ensuring every bite is tender, flavorful, and dripping with satisfaction. Skip it, and you’ll lose that maximum juiciness to the plate instead of your palate. Be careful not to let the foil touch the melty cheese, or else it will separate from the patty.

The Truffle Aioli Magic

No ordinary condiment here. My truffle aioli is a mayonnaise-like sauce infused with zesty lemon, pungent garlic, and the deep, luxurious essence of truffle. Spread generously on both buns, it ties the whole burger together with a rich, aromatic kick that elevates every bite.

Pairing Perfection

This burger shines alongside the right sides. I love serving it with Shoestring Truffle Fries—crisp, golden, and echoing that truffle vibe—or DaLynn’s Famous Potato Salad, a creamy, tangy companion that balances the richness. Either way, you’re in for a feast that hits all the right notes.
