Marinating adds flavor, moisture, and helps to tenderize meat before you cook it. It does not penetrate the meat as much as brining, so the flavor it imparts is mostly on the outside of the meat. This allows the qualities of the meat to remain intact when you grill. This marinade will enhance the flavor of chicken, pork, lamb, or beef. It will also partially caramelize when you grill with it so it enhances the visual quality of the cooked meat. It’s a very versatile go-to recipe for grilling.

Ingredients
  

  • ¼ cup olive oil – extra virgin
  • ¼ cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tbsp honey
  • 1 tbsp garlic – minced
  • 2 tsp Dijon mustard
  • 1 tsp black pepper – freshly ground

Instructions
 

  • Whisk all ingredients together in a glass bowl.
  • Marinate beef, chicken, or pork for 1 or more hours in the refrigerator before grilling.
