Bourbon Bacon Jam
Spicy sweet bacon and onion condiment for burgers

Ingredients
- 6 ounce bacon – unflavored, diced
- 1 small red onion – chopped
- 2 clove garlic – finely chopped
- ⅓ cup apple cider vinegar
- 2 tbsp brown sugar
- 2 tbsp Bourbon whisky
- 2 tbsp water
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp cayenne pepper
Instructions
- Sauté chopped bacon in a large skillet over medium heat, stirring occasionally, until crisp, about 15 minutes.
- Add 1 chopped small red onion and 2 chopped garlic cloves. Sauté until tender, about 5 minutes.
- Add 1/3 cup cider vinegar and 2 tablespoons each brown sugar, bourbon and water; simmer until the liquid is almost evaporated, about 15 minutes.
- Add a splash of bourbon, stir in. Season with salt, black pepper, and cayenne.
