This muffin recipe is one of DaLynn’s original creations. Sumptuous flavors of sweet melty chocolate, zesty orange and a tart burst of cranberry combine in a deliciously tasty muffin. Perfect with coffee for breakfast, or for desert. These muffins are amazing!

Ingredients
  

For the batter

  • ¾ cup whole milk
  • ½ cup vegetable oil
  • 1 egg
  • 2 cups bread flour
  • 1 cup white sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup semi-sweet chocolate chips
  • ½ cup whole cranberries – thawed
  • 1 tbsp orange zest – zest from one orange
  • 1 tsp vanilla extract

For the topping

  • 1 tbsp white sugar
  • 1 tbsp brown sugar
  • ½ tsp cinnamon

Instructions
 

  • Preheat the oven to 400℉. Apply cooking spray to muffin pan.
  • Add batter ingredients to a medium bowl then mix together with a spoon.
    3/4 cup whole milk, 1/2 cup vegetable oil, 1 egg, 2 cups bread flour, 1 cup white sugar, 2 tsp baking powder, 1/2 tsp salt, 3/4 cup semi-sweet chocolate chips, 1/2 cup whole cranberries, 1 tbsp orange zest, 1 tsp vanilla extract
  • Pour batter into muffin pan.
  • Mix the topping ingredients together in a small bowl. Sprinkle on top of the batter.
  • Bake for 20-22 minutes.

Leftover Muffins?

These muffins are so good, you probably won’t have many leftovers. If you do, don’t worry – they keep well. Add leftovers to a zip-lock bag and keep them in the freezer for up to a couple of months. Grab one or two when you want them, then zap in the microwave for 15-30 seconds. They will taste as good as the day you made them.

Delicious for Breakfast or Dessert

DaLynn’s chocolate chip orange cranberry muffins are always a delicious treat. I love them with coffee in the morning, or served warm with ice-cream for a decadently delicious dessert.

Muffin Variations

While orange and chocolate do pair exceptionally well, you might try substituting orange with lemon for a zesty twist. Instead of cranberry, you might try using blueberries or bits of tart apple, such as Granny Smith.
