Ingredients
 
 

  • 1 egg – large, beaten
  • 2 cups mashed potatoes – leftovers, cooled
  • 2 tbsp green onion – chopped
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ cup all-purpose flour
  • ½ cup Parmesan cheese – grated
  • 2 tbsp olive oil
  • 2 tbsp butter

Instructions
 

  • Beat the egg in a medium bowl.

  • Stir in the mashed potatoes and chopped green onion.

  • Add the salt, pepper, flour, and parmesan cheese.

  • Stir it all together until evenly distributed.

  • Add ¼ cup portions to a floured surface. Press into patties. Lightly dust both sides of each patty with flour.

  • When the butter has melted, add a set of cakes to the skillet, a few at a time making sure they don't touch. Fry without moving for 3-4 minutes.
    Fry the potato cakes, being careful to keep them separated. Fry in batches if necessary.
  • Carefully flip the cakes over. They should be golden brown on one side. Fry the other side for another 3-4 minutes, or until evenly browned.

  • Remove potato cakes to a paper towel lined baking sheet to drain any excess oil.

Not Just for Breakfast!

I find crispy potato cakes to be perfect for breakfast. But, they are also great for dinner. They pair very nicely with roasted chicken or pork chops.

Accoutrements

If you are serving potato pancakes for dinner, they would taste great topped with a dollop of sour cream, some bacon bits, and chopped chives – just like a baked potato.

They would also taste wonderful topped with a rich gravy, such as savory mushroom gravy or creamy country gravy.

Variations

Instead of green onions, try adding some finely chopped white onion. Replace parmesan cheese with grated cheddar cheese for an equally delicious option. Try using leeks instead of onions – they are excellent! Just use the white portion of the leek. Some folks will add a pinch of white pepper, instead of black pepper. This will give a subtly different flavor.
