More Information
If you like your yolks a bit runny, plan to eat this sandwich with a fork and knife. Otherwise you will likely squirt some on your shirt, which is not a great way to start the day!
I like to make my eggs over-medium when making sandwiches or tacos. You get just enough gooey yumminess without making too much of a mess. I’ll wrap a paper towel around the bottom of the sandwich so I can eat it while standing, without getting crumbs or yolk on my shirt.

Variations

For an extra hearty sandwich, add some hash-brown potatoes. The gooey egg yolks get down between the potatoes to make a super scrumptious bite.

Instead of toast and a fried egg, use a flaky biscuit, scrambled eggs, and bacon to make a delicious Bacon Egg and Cheese Biscuit Sandwich.

Use a buttermilk biscuit, scrambled eggs, and a sausage patty to make a yummy Sausage, Egg and Cheese Biscuit Sandwich.
Add a spoonful of Salsa and a sprinkle of Tex-Mex Spice Blend for a south of the border flare.
Biscuit Sandwiches

If you are making biscuit sandwiches, cook your eggs French Omelet style. Thin, folded over scrambled eggs are perfect for this purpose. One egg will be enough to make three biscuit sandwiches.
It’s a Simple Sandwich
The whole point of the Rise and Shine Breakfast Sandwich is its simplicity. It’s meant to be grab-and-go breakfast sandwich, not a full-on sit-down meal. Think of it like a breakfast taco. Don’t get too fancy with it!
