Smoked Pork Carnitas Quesadillas are a fun way to use leftover Smoked Pulled Pork. To make Carnitas, add Tex-Mex Spice Blend, then cook until the edges are crispy. Add the hot carnitas to a flour tortilla along with shredded mozzarella, then fold over and press until golden-brown, melty and delicious. Serve in wedges with fresh Pico de Gallo and sour cream.

Smoked Pork Carnitas Quesadillas

Ingredients
- 1 tsp olive oil
- 2 tsp Tex-Mex Spice Blend
- 1 cup smoked pulled pork – shredded
- ½ lime – juiced
- 4 flour tortillas
- 1 cup mozzarella cheese – grated
- ¼ cup sour cream
- ¼ cup Pico de Gallo
Instructions
- Heat up a dry comal or medium skillet over medium-low heat. Heat up olive oil in a separate medium skillet over medium heat.
- Add Tex-Mex Spice Blend directly to the hot oiled skillet.
- Add shredded Smoked Pulled Pork to the skillet.
- Toss with the spice blend, and cook until edges are crispy.
- Add lime juice to the cooked meat.
- Place a flour tortilla onto the hot comal. Add ¼ cup of shredded mozzarella and ¼ cup pulled pork, then carefully fold over and press down with a spatula.
- When the quesadilla starts to flatten out, this indicates that the cheese is melting. Carefully turn the quesadilla over and press the other side. There should be a light browning on the tortillas.
- Repeat for each half quesadilla, removing them to a tray when done.
- Cut each half quesadilla in half again, then serve with sour cream and fresh Pico de Gallo.

Smoked Boston Butt
Smoking a Boston Butt is a day-long labor of love. It’s a big pork roast, and unless you are having a barbecue party, you are likely to have lots of leftovers. What to do with all that pulled pork?
Portion it Out
I divide my leftover pulled pork into 2-cup portions, put into a vacuum seal bag, then drop it into the freezer. Reheating is as simple as simmering the sealed bag in water for about 30 minutes to gently heat it back up. It will be as good as the day you froze it. Use it to make tacos, quesadillas, sandwiches, pizzas, green chili, or chile rellenos.
Making Carnitas
I love using smoked pulled pork to make carnitas. It’s easy – just add a pinch of Tex-Mex Spice Blend, and cook until the edges are crispy. It’s perfect in Tacos de Carnitas, or Carnitas Quesadillas.
Use Melty Cheese
I’m using Mozzarella cheese in this recipe, because it is mild, melty, and makes a delicious quesadilla. Any melty Mexican cheese would probably be even better. Queso Chihuahua, Queso Asadero, or Queso Oaxaca would all be excellent options.
Dipping Sauces
Quesadillas are the most fun when you have interesting toppings or things to dip into. DaLynn’s Angry Sauce would be a spicy, delicious option. Or some fresh Pico de Gallo, or Salsa de Tomate Asado would be excellent. If you are going to have something spicy, you should also have something to cool it down, like sour cream.
