Turkey Gravy is the perfect finishing touch to Turkey Dinner. Savory flavors of sage and thyme are delicious on roasted or smoked turkey, mashed potatoes, or turkey dressing. It’s an amazingly tasty gravy that’s super easy to make.

Start with a light roux. Whisk in homemade turkey stock, sage, thyme, parsley, salt and pepper. Reduce until it is thick and delicious. Pour it over everything. That’s all there is to it!

Ingredients
- ¼ cup unsalted butter
- ¼ cup all-purpose flour
- 2 ½ cups Turkey Stock – hot, made in advance
- 1 tsp kosher salt
- ½ tsp black pepper
- 2 tbsp fresh sage leaves – chopped
- 2 tsp fresh thyme leaves – chopped
- 1 tbsp fresh parsley leaves – chopped
Instructions
- Melt butter in a medium saucepan over medium heat. Whisk in flour until lightly browned, about 1 minute.1/4 cup unsalted butter, 1/4 cup all-purpose flour
- Gradually whisk in hot turkey stock.2 1/2 cups Turkey Stock
- Whisk in salt, pepper, sage, thyme and parsley1 tsp kosher salt, 1/2 tsp black pepper, 2 tbsp fresh sage leaves, 2 tsp fresh thyme leaves, 1 tbsp fresh parsley leaves
- Bring to a boil. Reduce heat and simmer, whisking constantly until thickened, about 5-10 minutes.

Homemade Stock or Store Bought? Does it really matter?
Yes, you could use store-bought stock, such as Kitchen Basics Original Turkey Stock. Your gravy will probably turn out fine. But, the best way to make homemade Turkey Gravy is to start with homemade Turkey Stock. Why? It will definitely elevate your game, and you will get lots of compliments on your effort. The stock smells wonderful in your kitchen while you make it. It’s is very easy to make, and it’s versatile too. It can be used with rice to make a soup, or thickened to be use in a turkey pot pie. Sometimes I like to clarify it and sip it hot from a mug which is perfect on a cold winter day.
Other tips
When I spatchcock a turkey there are usually some trimmings left over, like the bones, giblets or fat that I removed. These are the perfect ingredients for making stock. Check out the recipe linked below.
If you collected drippings while roasting a turkey, don’t throw it out! Strain it and add it to the gravy. It will add an extra level of deliciousness!

Using fresh herbs makes a big difference in this gravy. You can substitute dried herbs, but you won’t get the wonderful aromas and intense flavors that you will if you use fresh sage, thyme, and parsley.
