Ingredients
  

  • 16 ounce Canned black-eyed peas
  • 1 cucumber – peeled, deseeded, and diced
  • 1 cup corn kernels
  • ½ cup white vinegar
  • 1 cup colored bell peppers – diced
  • 8 ounce cherry tomatoes – halved
  • ½ cup cilantro – torn
  • ½ cup Italian Dressing
  • ½ tsp kosher salt
  • ¼ tsp black pepper – freshly ground
  • 1 medium purple onion – diced and soaked in vinegar

Instructions
 

  • In a small glass bowl, add the diced purple onion and white vinegar. Let soak for about 30 minutes while you chop the remaining ingredients.
  • Toss all ingredients together, and chill for about 30 minutes so the flavors can meld.
  • Serve with corn chips.
