Zesty black eyed pea salad perfect for back patio barbecues, grilled chicken or burgers.
Equipment
- medium glass bowl
- small glass bowl
- slotted spoon
Ingredients
- 16 ounce Canned black-eyed peas
- 1 cucumber – peeled, deseeded, and diced
- 1 cup corn kernels
- ½ cup white vinegar
- 1 cup colored bell peppers – diced
- 8 ounce cherry tomatoes – halved
- ½ cup cilantro – torn
- ½ cup Italian Dressing
- ½ tsp kosher salt
- ¼ tsp black pepper – freshly ground
- 1 medium purple onion – diced and soaked in vinegar
Instructions
- In a small glass bowl, add the diced purple onion and white vinegar. Let soak for about 30 minutes while you chop the remaining ingredients.
- Toss all ingredients together, and chill for about 30 minutes so the flavors can meld.
- Serve with corn chips.
