Chili cheese fries are golden, delicious crinkle-cut fries topped with savory and spicy Chili con Carne, chopped red and green onions, and sliced jalapeño. Your mouth will love you for it. Your other end, maybe not so much.

It reminds me of the good ol’ days in college when I could eat what I wanted without worrying about the consequences. These fries are delicious, no doubt. Alas, there may be consequences.

Ingredients
 
 

  • 2 cups Chili con Carne – premade and warmed
  • ½ bag frozen French fries – crinkle cut are the best!
  • 1 cup cheddar cheese – freshly grated
  • ¼ cup red onion – finely chopped
  • ¼ cup green onions – finely chopped
  • 1 fresh jalapeño – thinly sliced (optional)

Instructions
 

  • Gently warm pre-made chili con carne in a small saucepan over medium heat.
    2 cups Chili con Carne
  • Prepare and cook fries on a cookie sheet lined with foil, according to package instructions.
    1/2 bag frozen French fries
  • Add grated cheddar on top of the cooked fries, and return to the oven for a few minutes to melt the cheese.
    1 cup cheddar cheese
  • Add chopped red onions, green onions, and optionally jalapeños.
    1/4 cup red onion, 1/4 cup green onions, 1 fresh jalapeño
  • Ladle warm chili on top, and serve warm.

A Game Day or Movie Night Favorite!

Chili cheese fries are perfect on game days, and on movie nights! They are fun and easy to eat, and don’t make too much of a mess.

Just fill a paper cup with crinkle fries. Ladle some hot chili on top of the fries. Top with shredded cheddar cheese, chopped red and green onions, and thinly sliced jalapeño peppers.

God gave most of us two hands for a reason. One hand to hold a beer, and the other to hold a cup of chili cheese fries!

Optional Toppings

Queso

Instead of shredded cheddar, try topping the fries and chili with a spoonful of Queso Poblano and chopped cilantro. You’ll probably want to make some for Nachos Compuestos, anyway. It’s another game-day favorite.
