Equipment
- medium glass mixing bowl
- vacuum sealer optional
Ingredients
- ½ cup olive oil
- ⅓ cup lime juice – freshly squeezed
- 3 tbsp Worcestershire sauce
- 1 tbsp cumin
- 1 tbsp chile powder
- 1 tbsp white sugar
- 1 tsp kosher salt
- ½ tsp black pepper – ground
- ½ tsp red pepper flakes
- 3 clove garlic – minced
Instructions
- In a glass mixing bowl, whisk together all of the ingredients.
- Marinade meat, vegetables, or seafood separately, refrigerated in a vacuum seal bag overnight, or for at least 3 hours in a bowl.
Notes
- Works great with meats or vegetables.
- Don’t mix meats and vegetables while marinading to avoid cross contamination.

Easy to Make
I use this fajita marinade recipe all the time. It’s my go-to recipe for grilled Tex-Mex. It has an authentic flavor, uses common ingredients, and it’s easy to make.
Use a Vacuum Sealer
For best results, add meats or vegetables into separate vacuum seal bags. Add a cup of marinade to each bag, and vacuum as much air as possible out before sealing the bag. Keep it in the refrigerator overnight.

Make sure you keep meats, vegetables, and seafood separate to avoid cross-contamination.
Marinading Vegetables
Bell Peppers
Slice red, yellow, orange, and green bell peppers into ¼-inch strips. They give fajitas a festive color that’s fun and delicious.
Onions
Use sweet or yellow onions for best results. Marinading the onions takes the bite out, or de-fangs the onions making them savory and delicious.
Other Filling for Fajitas
In addition to marinaded meats and vegetables, fajitas taste great with fresh Pico de Gallo. Or, use sliced fresh jalapeños, cilantro, cheddar or jack cheese, sour cream, and a squeeze of lime.
Tortillas
Flour tortillas are traditionally used with fajitas. They don’t fall apart as easily as corn tortillas, which is important when the fajitas are packed with fillings. Use fresh tortillas if possible. Some store-bought tortillas are much better than others. Try different brands until you find a brand you like. Good tortillas can make a big difference in the creating the best fajita flavor.
