Fried Onion Straws

Fried Onion Straws

Thinly sliced, crispy, delicious onion rings, perfect on burgers, salads, or just by themselves. If you are making burger toppers, you had better set some aside or keep your guests out of the kitchen because they will completely disappear before you can serve them. They are so good!

Equipment

  • large cast-iron skillet
  • oil thermometer
  • cutting board
  • kitchen knife
  • tongs
  • medium glass bowl
  • large glass bowl

Ingredients

  • 1 cup buttermilk
  • 1 large sweet onion – sliced very thinly and separated into rings
  • 1 cup all-purpose flour
  • 1 tbsp cornmeal
  • 1 ½ tsp kosher salt
  • 1 ½ tsp black pepper – finely ground
  • ½ tsp cayenne pepper
  • ¼ tsp paprika
  • 2 cups vegetable oil – or more if needed

Instructions

  • Pour buttermilk into a bowl. Place onion slices into the buttermilk, cover with plastic wrap, and refrigerate for at least 1 hour, or overnight.
  • Heat oil in a large skillet or deep-fryer to 400℉.
  • In a medium glass bowl, whisk together flour, cornmeal, salt, black pepper, cayenne pepper, and paprika.
  • Working in batches so as not to crowd, remove the onions rings from the buttermilk, shake off any excess, and place onions in the flour mixture to coat. Shake off any excess flour.
  • Cook onion rings in the hot oil until golden brown, about 3 minutes for each batch.
  • Transfer rings to a paper-towel lined cookie sheet to drain.

Notes

These come out so good! My guests devour them. If you are planning to use as a burger topping, you better hold some back or else they might be gone before the burgers are ready!

More Information

Onions to Use

Use large, sweet Vidalia onions for the fried onion straws. Yellow onions also work well. Avoid using red or white onions, they are too sharp. Slice the onions thin, and soak them in buttermilk to ‘de-fang’ them. This will make them much milder, and easier to eat.
