The hamburger may have originated in Germany, but this modern, deluxe, creative hamburger is 100% USA, even with the Canadian Bacon. The different flavors work so good together in this recipe, I think you will love it!
Barbecue Bacon Burger
Equipment
- charcoal grill
- cheese grater
- Skillet or Comal – for toasting the buns
Ingredients
- 4 Brioche buns
- 1 tbsp butter
- 1 pound 80% lean ground beef
- 1 tsp seasoned salt
- 1 tsp seasoned pepper
- 1 tbsp Worcestershire sauce
- 1 cup medium sharp cheddar – freshly grated
- 4 tbsp Gaspard's Texas Barbecue Sauce
- 12 slice hamburger dill pickles
- 4 slice Canadian bacon
- 2 cups Fried Onion Straws
- ¼ ripe garden tomato – thinly sliced
- 1 iceberg lettuce leaf
- 1 tbsp mayonnaise
Instructions
- Heat the grill using quality lump charcoal to 425℉. Hold at that temperature with the lid closed and vented for 15 minutes.
- While the grill is heating up, brush inside of the Brioche buns with butter, then toast on a skillet or comal until light golden brown. Set the toasted buns aside.4 Brioche buns, 1 tbsp butter
- Form four patties from the ground beef. Sprinkle with seasoned salt and seasoned pepper. Add a few dashes of Worcestershire sauce. Allow the beef patties to come to room temperature until the grill is ready.1 pound 80% lean ground beef, 1 tsp seasoned salt, 1 tsp seasoned pepper, 1 tbsp Worcestershire sauce
- Grill the patties for 4 minutes on one side, then flip and grill for 2 minutes more. Add the cheddar cheese, and close the lid (while vented) for 2 more minutes to melt the cheese. Remove the patties, and let rest for 5 minutes while you build the burgers.1 cup medium sharp cheddar
- Add barbecue sauce to the bottom bun, then pickles. Add the Canadian bacon, then the onion straws, then the burger patty with melted cheese. Add tomato slices, lettuce, mayonnaise and the top bun. Pin with large toothpicks, cut in half and serve with chips or potato salad.4 tbsp Gaspard's Texas Barbecue Sauce, 12 slice hamburger dill pickles, 4 slice Canadian bacon, 2 cups Fried Onion Straws, 1/4 ripe garden tomato, 1 iceberg lettuce leaf, 1 tbsp mayonnaise

My Barbecue Bacon Burger is similar to a burger called the Whisky River BBQ Burger served at Red Robin. My barbecue sauce is different and I add Canadian Bacon. I think my version is better. Try it out for yourself and let me know!

Use Good Beef
Use good quality, locally sourced beef if you can. It tastes better than that mass-produced pink slime in a tube. Locally source beef tastes better because it is raised with better quality feeds, and not injected with risky growth hormones and antibiotics that end up in the meat. Mass produced beef has to be transported farther, and so it can be harmful to the environment from an emissions perspective. Sourcing locally supports your local farmers and community, too.
Toast the Buns
Use good quality burger buns, and toast them. This makes a big difference in the texture of the burger, and it helps keep the bread from getting soggy because of sauce.
Garden Tomatoes
Use garden fresh tomatoes and lettuce if you can. That adds amazing flavor and crunch to your burger.
Use Good Charcoal
Use good quality lump charcoal. Briquets and junk charcoal add the bitter flavor of creosote which will ruin a char-grilled burger.
Grate the Cheese
Use good quality cheeses, and grate it yourself. Pre-sliced and pre-shredded cheeses develop a layer of mold that seriously detracts from the flavor and texture of the cheese.
