Heat the grill using quality lump charcoal to 425℉. Hold at that temperature with the lid closed and vented for 15 minutes.
While the grill is heating up, brush inside of the Brioche buns with butter, then toast on a skillet or comal until light golden brown. Set the toasted buns aside.
4 Brioche buns, 1 tbsp butter
Form four patties from the ground beef. Sprinkle with seasoned salt and seasoned pepper. Add a few dashes of Worcestershire sauce. Allow the beef patties to come to room temperature until the grill is ready.
1 pound 80% lean ground beef, 1 tsp seasoned salt, 1 tsp seasoned pepper, 1 tbsp Worcestershire sauce
Grill the patties for 4 minutes on one side, then flip and grill for 2 minutes more. Add the cheddar cheese, and close the lid (while vented) for 2 more minutes to melt the cheese. Remove the patties, and let rest for 5 minutes while you build the burgers.
1 cup medium sharp cheddar
Add barbecue sauce to the bottom bun, then pickles. Add the Canadian bacon, then the onion straws, then the burger patty with melted cheese. Add tomato slices, lettuce, mayonnaise and the top bun. Pin with large toothpicks, cut in half and serve with chips or potato salad.
