Gaspard’s Texas BBQ Sauce
Equipment
- medium saucepan
- immersion blender
Ingredients
- 2 cups Roasted Cherry Tomato Sauce – or use canned tomato sauce
- ¼ cup dark brown sugar
- 2 tbsp molasses – non-sulphured
- 2 tbsp apple cider vinegar
- 3 tbsp Worcestershire sauce
- 1 tbsp hickory powder – or 2 tbsp liquid smoke
- 1 ½ tbsp chili powder – just use regular chili powder
- 1 tbsp garlic powder
- 1 tsp cumin
- ½ tsp black pepper
- ¼ tsp kosher salt
Instructions
- Add all ingredients to a medium sauce pan. Bring up to medium-low heat.2 cups Roasted Cherry Tomato Sauce, 1/4 cup dark brown sugar, 2 tbsp molasses, 2 tbsp apple cider vinegar, 3 tbsp Worcestershire sauce, 1 tbsp hickory powder, 1 1/2 tbsp chili powder, 1 tbsp garlic powder, 1 tsp cumin, 1/2 tsp black pepper, 1/4 tsp kosher salt
- Use an immersion blender to blend and puree all ingredients until smooth.
- Reduce heat to low. Simmer for 5 minutes while stirring occasionally.
- Allow the sauce to come to room temperature. Use it immediately, or for best flavor, refrigerate overnight.

Hickory Powder
Hickory powder is sold in spice stores, and can be found on-line. It gives a nice smokey flavor to the sauce. If you can’t find hickory powder, you can use a couple tablespoons of hickory liquid smoke, instead.
Chile Powder
My recipe calls for standard American chile powder, which is only mildly spicy. If you want more heat, use Ancho chile powder, or other hot chile powders. Just be careful not to add too much, or it will overpower the other flavors in the sauce.
Adobo Sauce
To kick up the heat, try adding a couple tablespoons of Adobo sauce. This will add heat and smokey chipotle flavor that tastes amazing in this sauce!
Cumin
Cumin is what gives Gaspard’s Texas BBQ Sauce a Tex-Mex flavor that really goes well with smoked pulled pork. You could leave out the cumin, but then you would also need to take ‘Texas’ out of its name.

Toss some shredded smoked pulled pork with Gaspard’s Texas BBQ Sauce, add it to a brioche bun with sliced pickles. It’s a fantastic BBQ sandwich.
Keep Refrigerated
If you have extra sauce, keep it refrigerated in a jar with a lid. It will keep for a couple of weeks. The acidity from the vinegar will prevent it from spoiling.
