Ingredients
- 1 tbsp butter
- 1 cup Yukon Gold potatoes – diced to ¼ inch
- ½ tsp kosher salt – divided
- ¼ tsp black pepper – divided
- 3 large eggs
- ¼ cup half and half
- ½ cup ham – diced to ¼ inch
- ¼ cup cheddar – freshly grated
- 1 green onion – chopped
- 1 cup sour cream
- ¼ cup Salsa de Tomate Asado
Instructions
- Melt butter in a small skillet over medium heat. Preheat oven to 350℉.1 tbsp butter
- Add diced potatoes with a pinch of salt and pepper. Toss in the melted butter.1 cup Yukon Gold potatoes, 1/2 tsp kosher salt, 1/4 tsp black pepper
- Cover the skillet with a lid, reduce heat to low and cook for 5 minutes.
- While potatoes are cooking, whisk together the eggs, half and half, and remaining salt and pepper.3 large eggs, 1/4 cup half and half

- Remove the lid from the potatoes and turn off the heat.
- Pour the egg mixture over the potatoes.
- Tap the mixture down until it is smooth on top.
- Bake in the oven for 40 minutes.
- Remove from the oven and cool for a few minutes.
- Cut into wedges and serve warm.
