Oven roasted turkey breast, citrus brined, slathered in herbs and roasted to moist, delicious perfection. It’s fantastic sliced and serve in sandwiches, or as the main course with mashed potatoes, turkey dressing, and turkey gravy. While the same method can be used to roast a whole turkey, this recipe focusses on the breast.

Equipment
- large stock pot – for brining
- small bowl – for wet rub
- roasting pan, or sheets with racks
- digital thermometer
- foil
Ingredients
- turkey breast 3 – 8 pounds
- Citrus Poultry Brine – prepared in advance
- 2 tbsp olive oil
- 2 tsp paprika
- 2 tsp oregano – dried
- 2 tsp rosemary – minced
- 1 tsp thyme – dried
- 2 tsp kosher salt
- 1 tsp black pepper – ground
- 1 tsp onion powder
- 1 tsp garlic powder
Instructions
- Brine the turkey breast for 24 hours prior to roasting (see Citrus Poultry Brine recipe).turkey breast, Citrus Poultry Brine
- Preheat oven to 375℉. In a small bowl, stir together the olive oil, paprika, oregano, rosemary, thyme, salt, black pepper, onion powder and garlic powder to form a paste.2 tbsp olive oil, 2 tsp paprika, 2 tsp oregano, 2 tsp rosemary, 2 tsp kosher salt, 1 tsp thyme, 1 tsp black pepper, 1 tsp onion powder, 1 tsp garlic powder
- Remove the turkey breast from the brine and rinse in cool water. Thoroughly dry with paper towels. Loosen the skin with your finger and spoon some of the spice mixture under the skin, spreading it out as much as possible. Slather the spice paste evenly, coating all of the meat as evenly.
- Insert a digital thermometer probe into the thickets part of the breast. Roast for about 20 minutes per pound.
- Remove from the oven when the internal temperature reaches 160℉.
- Cover with foil, and rest for 15 minutes before carving to redistribute the juices.

Roasting a Whole Turkey

You can use the exact same method to roast a whole turkey. Just remember that the breast meat will cook faster, so to keep the breast meat from drying out you will need to tent it in foil until the thighs are done.

Freezing and Reheating
If you intend to freeze the turkey breast for later consumption, allow it to cool while wrapped in foil. Add each roasted turkey breast to a vacuum seal bag, along with any juices that accumulated in the foil. Vacuum seal, then freeze for up to 6 months. To reheat, just drop the unopened vacuum seal bag into a large stock pot of simmering water, and let it simmer for about 30 minutes.
