Introduction
The Ralph Bellamy is a classic bacon, lettuce, and tomato sandwich. I love a good B.L.T. Lightly toasted bread, creamy mayonnaise, salty crispy bacon, crunchy fresh lettuce, and a ripe garden tomato. It’s got to be the most perfect bite.

Commodities are agricultural products… like coffee that you had for breakfast… wheat, which is used to make bread… pork bellies, which is used to make bacon, which you might find in a ‘bacon and lettuce and tomato’ sandwich.

The Ralph Bellamy
Equipment
- 2 medium skillets
- spatula
- cutting board
- kitchen knife
Ingredients
- 2 slice sandwich bread
- 2 pat butter
- 2 slice bacon
- 1 tbsp mayonnaise
- 1 leaf lettuce
- 1 garden tomato – sliced
- ¼ tsp kosher salt
- ⅛ tsp black pepper – ground
- ½ avocado – sliced, optional
Instructions
- In a seasoned cast iron skillet, fry the bacon over medium-low heat. When bacon is cooked to desired crispness, remove and drain on a paper towel.
- Heat a separate skillet over medium heat. Add two pats of butter, place a slice of sandwich bread over the butter, and move it around in the pan to evenly absorb the melted butter. Fry the bread in the butter until lightly toasted, then flip over and lightly toast the other side. Once toasted, remove to a place with the buttered side facing up, and let cool.
- Slice the garden tomato into ¼ inch thick slabs. Sprinkle one side with salt and pepper.
- Slather mayonnaise onto the buttered sides of the toasted bread.
- Lay lettuce across the bottom slice – this acts as a barrier for the juicy tomato, so it doesn't make the toasted bread soggy. Next place a tomato slice on top of the lettuce. Cut the two bacon slices in half, then place them on top of the tomato in a 2×2 pattern.
- Optionally top with avocado slices (this would make it into a B.L.A.T.).
- Top with the remaining slice of toast, then cut the sandwich in half on a bias, plate and serve.

Fresh is always best!
Use garden fresh heirloom tomatoes if you can. They have amazing flavor, and really make for a better B.L.T. Add salt and pepper directly to the slab of tomato to bring out the best flavor. If you don’t have garden tomatoes, use Roma tomatoes instead. Romas have good flavor and a high pulp to juice ratio, so they won’t make your sandwich soggy.
Garden lettuce is also better! Tear the lettuce, never slice it. Slicing lettuce will make it wilt faster. The best B.L.T.s have crunchy, fresh, leafy lettuce.
Light toasting
Lightly toast the bread. The bread should only be a little toasty. The Ralph Bellamy is a mouthful so you don’t want it to be too toasty or it will be hard to eat. Or like we like to say, “tear the roof off your mouth”.
