Ingredients
- 1 cup vegetable oil – for frying the corn tortillas
- 4 corn tortillas
- 1 tbsp Tex-Mex Spice Blend
- ½ cup Carne Molida
- ½ cup Texas Enchilada Sauce
- ¼ cup Refried Black Beans
- 1 cup cheddar cheese – grated
- 1 dash hot sauce – such as Tapatio
- 1 plumb tomato – seeded and diced
- 1 tbsp cilantro – chopped
- 4 tbsp sour cream
Instructions
- Preheat oven to 450℉. While the oven is preheating, heat vegetable oil in a medium skillet to 350℉.1 cup vegetable oil
- Fry the corn tortillas until crisp, then drain them on a paper towel and add them to a baking sheet. Lightly sprinkle with Tex-Mex Spice Blend.4 corn tortillas, 1 tbsp Tex-Mex Spice Blend
- Top with 2 tbsp Carne Molida (taco meat), the spread 2 tbsp Texas Enchilada Sauce over the meat.1/2 cup Carne Molida, 1/2 cup Texas Enchilada Sauce
- Add ¼ cup Refried Black Beans and ¼ cup grated cheddar over the sauced meat. Add a dash of hot sauce, if you wish.1/4 cup Refried Black Beans, 1 cup cheddar cheese, 1 dash hot sauce
- Bake for 5 minutes, then remove to serving plates. It's ok if the cheese is slightly charred. Top with sour cream, diced tomatoes, and cilantro. Serve hot.1 plumb tomato, 1 tbsp cilantro, 4 tbsp sour cream

Variations
You could use Frijoles Refritos made from pinto beans instead of black beans on Tostadas Compuestas. Instead of Carne Molida, you could use shredded, Char-grilled Chicken, or Skillet Chicken Fajita meat. This would taste great with Enchiladas Verdes Sauce instead of Texas Enchilada Sauce. Top it with fresh Pico de Gallo, or Salsa de Tomate Asado. The choices are endless! Be creative, and have fun!

What’s the difference between Tostadas and Chalupas?
Tostadas are normally made from day-old home-made corn tortillas that are fried until crisp. Chalupas are basically the same thing, but the tortillas are left a little bit flexible by frying it less. In Spanish, the word ‘chalupa’ loosely translates to ‘small canoe’, which describes a chalupa shell that is made into a U-shape. This shape allows it to hold more fillings.
